Ieri Anema e Core, oggi Saulle Re. La pizzeria si trova all’ingresso di Aosta, in periferia; fra capannoni e market, ristoranti cino-giapponesi e fast food. Il contesto è banale, ma la pizzeria si fa subito notare: parcheggio facile, dehors esterno, buona accessibilità per tutti; all’interno campeggia un grande forno a legna piastrellato, con mosaico dorato; poi si nota un angolo bottega di prodotti alimentari (valdostani, campani, italiani in genere); ambiente moderno, pulito e piacevole; semplice apparecchiatura, ma completa. Molta cucina e grande affabilità: spiegano, raccontano, sono orgogliosi dei riconoscimenti ottenuti. Lunghe lievitazioni, lievito madre, digeribilità garantita, farine ricercate, prodotti campani tipici, slow e dop; attenzione alla Valle d’Aosta e ai suoi sapori. Buona scelta di vini e birre. Il locale è ampio, ma le prescrizioni anti covid hanno ridotto i posti. Meglio dunque prenotare. Si consiglia sempre di telefonare per prenotare.
Originally “Anema e Core” (“soul and heart” in the Neapolitan dialect), today it is “Saulle Re”. The pizzeria is located in the outskirts of Aosta, right at its entrance. It is surrounded by warehouses and markets, Chinese-Japanese restaurants and fast food restaurants. Therefore, the location appears less than desirable, but the pizzeria stands out immediately: easy parking is provided, there is an outdoor terrace, and there is adequate accessibility for everyone. Inside stands the large tiled, wood-fired oven showing off a golden mosaic. Then you will notice a small shop that features food products from Valle d'Aosta, Campania, and Italy in general. The pizzeria is modern, clean and it is overall a very pleasant environment to be in. The pizza chefs use simple equipment but nothing is missing. They are very proud of the awards achieved and results accrued, they explain, thanks to their affability and lots and lots of good cuisine. Long-leavening mother yeast and refined flours are used to guarantee a light dough for good digestibility. Typical products of Campania, slow food and P.D.O., and the attention to the Valle d'Aosta and its flavors, all guarantee an excellent experience for the client. There is an ample choice of wines and beers. The place is large, although the recent anti-covid regulations have reduced the amount of available seating. So it is best to book in advance, preferably by phone.
