Aperta nel 2014, la sede fiorentina di Berberè si trova nel centralissimo quartiere di San Frediano. Locale dallo stile e dal servizio di stampo nordico e informale propone pizze principalmente a base di ingredienti bio e Presidi Slow Food, dalle farine, alla Mozzarella di Bufala, con tre tipi di impasto di cui uno senza lievito a base di grano spezzato. Le pizze servite in spicchi conditi uno ad uno, sono leggere ma croccanti all’esterno; ampia la scelta vegetariana, ma non mancano i salumi (di Mora Romagnola) aggiunti all’uscita dal forno.
Opened in 2014, the Fiorentine branch of Berberè is in the very central district of San Frediano. This establishment is Nordic both in style and service, which is informal, and proposes pizzas mainly based on organic and slow food ingredients, from the flours, to the buffalo mozzarella, with three types of doughs, one of which is without yeast and based on cracked grain. The pizzas are served in slices topped one-by-one and they are light but crispy on the outside; there is a wide selection of vegetarian pizzas, but deli meat (from Mora Romagnola)-topped pizzas are also available and are added once the pizzas have come out of the oven.
